Thanks Simon for pointing to the grilled corn recipes at majordojo. Corn is probably one of the most amazing treats one can grill. It requires in some cases almost no preparation, no eating utensils, and when fresh, doesn't even need dressing. Over the course of countless BBQs, some lucky accidents,... [majordojo] I will add one of my own recent favorites - Grilled Mexican Sweet Corn. Mix up some mayonaise (one cup), a diced garlic clove, and red pepper (approx 1/8 tsp). Refrigerate for one hour. Remove the husk and silk from the corn, grill until marked on all sides - about 10 minutes or so. I advise against overgrilling (don't let it turn brown or black) - unless you enjoy chewy, dried corn. Spread the spicy mayo mix on the corn. Sprinkle shredded cheddar cheese on the corn and serve. |
