HOWTO for Zenblaster's Family Chex Mix Recipe
Ingredients
- two Papa John's Pizza containers of Garlic Butter sauce
- one empty garlic butter container (as a measuring container) filled with Worchester Sauce
- Season Salt (no MSG)
- 2 cups of clean Grade A Pecans
- 4 heaping cups of Corn Chex Cereal
- 4 heaing cups of Rice Chex Cereal
Instructions
- Add garlic butter and worchester sauce to large glass microwave safe dish with cover.
- Add pecans and mix. Add season salt and mix.
- Microwave 90 seconds covered. Stir. Microwave another 90 seconds covered. If you use other types of nuts, this time may need to be reduced or eliminated. This step is to get the pecans fully seasoned and somewhat dried out by the time the entire cooking is complete.
- Add all 8 cups of Chex Mix cereal. Carefully stir with a large wooden spoon. Place cover on dish. Rotate dish causing contents to stir and mix, keeping cover tightly closed. Add season salt to taste and mix again. Mixing at this stage and after the next is very important to get a good consistent coating on cereal. Mix a lot, but dont crush the cereal at this step.
- Microwave covered 2 minutes on High, remove, stir. Add last bit of season salt and stir and/or rotate dish to mix. Dont worry if the mix seems "wet" at this stage. Mix well.
- Microwave covered 2 minutes on High, remove, stir.
- Microwave covered 2 minutes on High, remove, stir.
- Microwave UNCOVERED 2 minutes on High, remove, stir.
- Empty contents on layer of newspaper covered by paper towels. Spread out mix into thin layer so it can finish cooling and drying.
- Check level of season salt. Adjust amount of season salt and cook next batch, adding new batch of mix on top of previous batch. This helps keep the level of season salt reasonable throughout making of several batches. More is needed in first batch, to get glass dish coated well and "primed" for later batches.
